Ingredients

1 lb ground beef or turkey

1 can (10 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or canned)

1 block (8 oz) cream cheese, cubed

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

Tortilla chips, for serving

Instructions

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

Transfer the cooked meat to the crockpot and add in the diced tomatoes with green chilies, black beans, corn, garlic powder, onion powder, cumin, salt, and pepper. Stir until well combined.

Add the cubed cream cheese to the crockpot. Cover and cook on low for 2 hours, stirring occasionally, until the cream cheese is melted.

After 2 hours, stir in the shredded cheddar cheese until fully melted and incorporated into the mixture. If the queso is too thick, add a splash of milk for desired consistency.

Taste and adjust seasonings if necessary. Keep warm in the crockpot until ready to serve.

            Prep Time: 10 minutes | Total Time: 2 hours 10 minutes | Servings: 8
