12 oz Pennette pasta

4 oz pancetta, diced

1 bunch of asparagus (about 1 lb), trimmed and cut into 2-inch pieces

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pennette according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

    Sauté Pancetta: In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta from the skillet and set aside, leaving the drippings in the skillet.

      Cook Asparagus: In the same skillet, add 2 tablespoons of olive oil and heat. Add the asparagus pieces and sauté for 4-5 minutes until they are tender but still bright green. Add the minced garlic and sauté for an additional minute until fragrant.

        Combine: Reduce the heat to low and return the crispy pancetta to the skillet. Stir in the heavy cream and grated Parmesan cheese, mixing until the cheese has melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach the desired consistency.

          Mix Pasta and Sauce: Add the cooked pennette to the skillet, tossing to coat the pasta with the sauce. Season with salt, pepper, and lemon zest (if using) to taste.
