2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup milk

3 large eggs

1 tablespoon baking powder

½ teaspoon salt

1 tablespoon lemon zest (freshly grated)

¼ cup lemon juice (freshly squeezed)

1 teaspoon vanilla extract

Powdered sugar for dusting (optional)

Fresh lemon slices and mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch cake pan or line it with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and lemon juice.

        In a separate bowl, whisk together the flour, baking powder, salt, and lemon zest.

          Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Blend until just combined (do not overmix).

            Pour the batter into the prepared cake pan and spread it evenly.

              Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                  Once cooled, dust the top with powdered sugar and garnish with fresh lemon slices and mint leaves if desired.
