4 large egg whites

1 cup granulated sugar

1 teaspoon cream of tartar

1 teaspoon vanilla extract

1 package (3 oz) flavored gelatin (your choice of flavor)

A pinch of salt

Optional: Food coloring to match your gelatin flavor (e.g., pink for strawberry, green for lime)

Instructions
 

Preheat your oven to 200°F (95°C) and line two baking sheets with parchment paper.

    In a clean mixing bowl, whip the egg whites with an electric mixer on medium speed until foamy.

      Add the cream of tartar and continue to whip until soft peaks form.

        Gradually add the granulated sugar, one tablespoon at a time, while whipping on high speed until stiff, glossy peaks form. This should take about 5-7 minutes.

          Gently fold in the flavored gelatin, vanilla extract, and a pinch of salt using a spatula, being careful not to deflate the meringue. If desired, add a few drops of food coloring to enhance the color.

            Using a piping bag or a spoon, drop dollops or pipe swirls of meringue onto the prepared baking sheets, leaving space between each cookie as they don’t spread.

              Bake in the preheated oven for 1.5 to 2 hours, or until the cookies are dry and can lift off the parchment without sticking. The cookies should be crisp on the outside and soft inside.

                Turn off the oven and let the meringue cookies cool completely inside the oven with the door slightly ajar to prevent cracks.

                  Once cooled, carefully remove the cookies from the parchment and serve or store in an airtight container.
