Ingredients

1 pound ground beef (or ground turkey)

1 cup uncooked elbow macaroni

2 cups beef broth (low-sodium)

1 cup diced tomatoes (canned, undrained)

1 cup sharp cheddar cheese, shredded

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 tablespoon taco seasoning (or more to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

In a large skillet or saucepan, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces, about 5-7 minutes. Drain any excess fat.

Stir in the taco seasoning, garlic powder, and onion powder, mixing well until the beef is evenly coated with the spices.

Add the uncooked elbow macaroni, beef broth, diced tomatoes (with juice), black beans, and corn to the skillet. Stir to combine all ingredients.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed. Stir occasionally to prevent sticking.

Remove from heat and stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste, adjusting flavors as necessary.

Serve hot, garnished with fresh cilantro for a pop of color and flavor.
