1 lb ground beef

1 cup long-grain rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, chopped

1 cup bell pepper, diced (any color)

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Drain excess fat, if necessary, and add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté for another 5 minutes or until the vegetables are soft.

        Stir in the rice, beef broth, diced tomatoes (with their juices), paprika, oregano, salt, and black pepper. Bring the mixture to a simmer.

          Once simmering, cover the skillet with a lid and reduce the heat to low. Cook for about 15 minutes, or until the rice has absorbed most of the liquid and is tender.

            Transfer the mixture to a greased 9x13 inch baking dish. Spread it out evenly.

              Sprinkle the shredded cheddar cheese on top of the casserole.

                Bake uncovered in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let it rest for 5 minutes before garnishing with fresh parsley.

                    Serve hot and enjoy your comforting casserole!
