Ingredients
  

1 cup long-grain white rice

2 cups chicken broth

1 tablespoon vegetable oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (green or red), diced

2 stalks celery, diced

1 pound ground chicken or turkey

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup frozen peas

Salt and pepper to taste

2 green onions, sliced for garnish

Fresh parsley, chopped for garnish

Instructions
 

Rinse the rice under cold water until the water runs clear. Drain and set aside.

    In a medium saucepan, bring the chicken broth to a boil. Add the rice, cover, and reduce heat to low. Cook for about 15-18 minutes, until the rice is tender and liquid is absorbed.

      Meanwhile, in a large skillet, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5-7 minutes, until the vegetables soften.

        Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

          Add the ground chicken or turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

            Season the mixture with smoked paprika, dried thyme, cayenne pepper, salt, and pepper. Stir well to combine.

              Fold in the cooked rice and frozen peas, mixing until everything is combined and heated through, about 3-5 minutes.

                Taste and adjust seasoning if necessary.

                  Remove from heat and garnish with sliced green onions and chopped parsley before serving.
