200g dried pasta (your choice: penne or fusilli)

200g chorizo sausage, diced

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, sliced

1 can (400g) diced tomatoes

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

Fresh basil or parsley, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

    Sauté the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the diced chorizo and cook for about 5-7 minutes, stirring occasionally, until it becomes crispy and releases its oils.

      Add Vegetables: Stir in the chopped onion and sliced red bell pepper to the skillet. Sauté for another 5 minutes, or until the onion becomes translucent.

        Incorporate Garlic and Spices: Add the minced garlic to the skillet and cook for an additional minute until fragrant. Then, sprinkle in the smoked paprika and red pepper flakes, stirring to combine.

          Add Tomatoes: Pour the canned diced tomatoes (with their juice) into the skillet. Stir well to combine all ingredients and let the mixture simmer for about 10 minutes, allowing the flavors to meld. If the sauce is too thick, add some reserved pasta cooking water to reach your desired consistency.

            Combine with Pasta: Add the cooked pasta into the skillet, tossing to coat it evenly in the chorizo sauce. Cook for an additional 2-3 minutes to heat through. Season with salt and black pepper to taste.

              Serve: Remove the skillet from heat and garnish with fresh basil or parsley. Serve hot with grated Parmesan cheese on top.
