2 cups fresh or frozen cherries, pitted

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1 tablespoon cornstarch (optional for thicker consistency)

2 tablespoons water (if using cornstarch)

In a medium saucepan, combine the cherries and sugar over medium heat. Stir gently until the sugar begins to dissolve and the cherries start releasing their juices.

    Add the lemon juice, vanilla extract, and ground cinnamon to the cherry mixture. Stir well to combine.

      Bring the compote to a simmer, then lower the heat to maintain a gentle simmer. Cook for about 10-15 minutes until the cherries soften and the sauce thickens slightly.

        If you prefer a thicker compote, dissolve the cornstarch in the water in a small bowl, then stir this mixture into the compote. Cook for another 2 minutes, stirring continuously until it thickens.

          Remove from heat and allow the compote to cool for a few minutes. It will continue to thicken as it cools.
