1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

¼ cup soy sauce

¼ cup apple cider vinegar

¼ cup brown sugar

1 tablespoon ginger, freshly grated

2 cloves garlic, minced

2 tablespoons ketchup

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

2 green onions, sliced (for garnish)

Cooked white rice (for serving)

Instructions
 

In a medium bowl, whisk together soy sauce, apple cider vinegar, brown sugar, ginger, garlic, ketchup, and sesame oil until well combined.

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes.

      Once the chicken is cooked, pour the prepared sauce over the chicken in the skillet. Stir well to coat the chicken with the sauce.

        Let the mixture simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

          In a small bowl, mix the cornstarch and water to create a slurry. Slowly add it to the skillet, stirring constantly until the sauce reaches your desired thickness, about 1-2 minutes.

            Serve the Bourbon chicken over cooked white rice, garnished with sliced green onions.
