Ingredients
  

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell pepper, finely diced (red or green)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon soy sauce

1 cup frozen peas

Salt and pepper, to taste

1 package pre-made empanada dough (about 12 rounds)

1 egg, beaten (for egg wash)

Optional: parsley or cilantro for garnish

Instructions
 

In a large skillet over medium heat, add a drizzle of olive oil and sauté the chopped onion and garlic until translucent, about 3 minutes.

    Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

      Stir in the diced bell pepper, ground cumin, smoked paprika, soy sauce, frozen peas, salt, and pepper. Cook for another 2-3 minutes until the bell pepper softens and peas are heated through. Remove from heat and let the mixture cool slightly.

        Preheat your oven to 375°F (190°C).

          Take the empanada dough rounds and place them on a clean surface. Spoon about 1-2 tablespoons of the beef mixture into the center of each round.

            Gently fold the dough over to create a half-moon shape, pressing the edges to seal. You can crimp the edges with a fork for a decorative touch.

              Place the filled empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a beautiful golden color.

                Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.

                  Remove from the oven and let them cool for a few minutes before serving.
