Ingredients

200g digestive biscuits, crushed

100g unsalted butter, melted

1 can (397g) sweetened condensed milk

2 ripe bananas, sliced

250ml heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Chocolate shavings or cocoa powder for garnish

Instructions

Prepare the Base: In a mixing bowl, combine the crushed digestive biscuits and melted butter. Mix until the biscuits are well-coated and the mixture resembles wet sand.

Form the Crust: Press the biscuit mixture firmly into the base and up the sides of a 9-inch pie dish. Use the back of a spoon to create an even layer. Chill in the refrigerator for 30 minutes to set.

Make the Caramel: While the crust is chilling, prepare the caramel by placing the can of sweetened condensed milk in a pot of simmering water. Ensure it’s fully submerged and let it simmer for 2-3 hours, refilling water as necessary. (Alternatively, you can use store-bought caramel sauce).

Fill the Pie: Once the caramel is ready (it should be a golden brown color), carefully remove it from the can and spread it over the chilled biscuit crust in an even layer.

Add Bananas: Layer the sliced bananas evenly over the caramel layer, ensuring they are well-distributed.

Prepare the Whipped Cream: In a medium bowl, whisk the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Top the Pie: Spread the whipped cream over the banana layer, using a spatula to create swirls and peaks for a decorative finish.

Garnish: Sprinkle chocolate shavings or a dusting of cocoa powder over the top for an extra touch.

Chill: Refrigerate the pie for at least 2 hours or until you’re ready to serve.

                    Prep Time: 30 minutes | Total Time: 2.5 hours | Servings: 8

                      - Presentation Tips: Slice into wedges and serve on a dessert plate with a sprinkle of additional chocolate shavings. Consider a side of extra whipped cream or caramel sauce for drizzling.
