8 pork sausages (preferably herby)

4 large russet potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon olive oil

1 large onion, thinly sliced

1 cup beef broth

1 teaspoon Dijon mustard

Fresh parsley for garnish

Start by boiling a large pot of salted water. Once boiling, add the cubed potatoes and cook for about 15-20 minutes, or until tender when pierced with a fork.

    While the potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the sausages and cook until browned all over, turning occasionally (about 10-12 minutes). Remove the sausages and set aside.

      In the same skillet, add the sliced onions and sauté until golden brown and caramelized, stirring occasionally for about 8-10 minutes.

        Once the onions are caramelized, return the sausages to the skillet. Pour in the beef broth and add the Dijon mustard. Simmer for an additional 5 minutes to meld the flavors together.

          Drain the cooked potatoes and return them to the pot. Add the butter and milk, then mash until creamy. Season with salt and pepper to taste.

            Serve the sausages and onions over a generous scoop of mashed potatoes. Drizzle some of the tasty onion gravy over the top.

              Garnish with freshly chopped parsley for a touch of color and flavor.
