8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

2 cups shredded sharp cheddar cheese

½ cup breadcrumbs

Preheat your oven to 350°F (175°C).

    Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until the mixture turns light golden brown.

        Slowly pour in the milk while continuously whisking to prevent lumps from forming. Continue stirring until the mixture thickens (about 5 minutes).

          Add the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper to the sauce, mixing well.

            Lower the heat and gradually stir in 1 ½ cups of shredded cheddar cheese until melted and smooth. Remove from heat.

              In a large bowl, combine the cooked macaroni with the cheese sauce, stirring until pasta is evenly coated.

                Transfer the mac and cheese mixture to a greased baking dish (about 9x13 inches).

                  Sprinkle the remaining ½ cup of cheddar cheese and breadcrumbs evenly on top of the mixture.

                    Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and the breadcrumbs are golden brown.
