12 oz penne pasta

1 tbsp olive oil

1 lb smoked sausage (e.g., andouille or kielbasa), sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 tbsp Cajun seasoning

1 can (14.5 oz) diced tomatoes with green chilies

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage and Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
