1 loaf of crusty sourdough bread, cubed

8 large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup cooked and crumbled breakfast sausage

1 cup diced bell peppers (mix of red, yellow, and green)

1 small red onion, diced

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in garlic powder, thyme, salt, and pepper to taste.

      Add the cubed sourdough bread to the egg mixture, gently folding it until the bread is well-coated. Let it soak for about 10 minutes.

        In a separate bowl, combine the cooked breakfast sausage, diced bell peppers, and red onion. Mix well.

          Spread half of the soaked bread mixture evenly in the prepared baking dish. Top with half of the sausage and vegetable mix, then sprinkle half of the shredded cheddar cheese over the top.

            Repeat the layers with the remaining bread mixture, sausage and vegetable mix, and finish with the remaining cheese.

              Pour any remaining egg mixture over the casserole to ensure even moisture.

                Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.

                  Once cooked, let it cool for about 5 minutes before garnishing with fresh parsley.
