1 lb ground beef (80/20 blend)

4 slices of cheddar cheese

2 slices of American cheese

2 soft burger buns

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

1 tablespoon mayonnaise

1 tablespoon ketchup

1 teaspoon Dijon mustard

1 teaspoon sweet pickle relish

1 teaspoon Worcestershire sauce

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon smoked paprika

Optional toppings: lettuce, tomato slices, pickles, and onion slices

Prepare the Special New York Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, Worcestershire sauce, garlic powder, onion powder, and smoked paprika. Mix well until smooth and set aside.

    Form the Patties: Divide the ground beef into 4 equal portions (about 4 ounces each) and gently shape them into balls. Do not overwork the meat to keep the patties tender.

      Heat the Pan: In a large skillet or griddle, heat the olive oil over medium-high heat until shimmering.

        Cook the Patties: Place two beef balls onto the hot skillet. Use a heavy spatula to smash them down firmly into thin patties (about 1/2 inch thick). Season the tops with salt and pepper.

          Flip & Add Cheese: After 2-3 minutes, when the edges are browned and crispy, flip the patties. Immediately place two slices of cheddar cheese and one slice of American cheese on each patty. Cover with a lid for about 1 minute to melt the cheese.

            Toast the Buns: While the cheese is melting, split and toast the burger buns on the skillet until golden brown.

              Assemble the Burgers: Spread a generous amount of the Special New York Sauce on both sides of the toasted buns. Place one cheesy patty on the bottom bun, add the second cheesy patty on top, and layer with your choice of optional toppings (lettuce, tomato, pickles, onions).

                Serve: Top with the other half of the bun to complete the burger and enjoy immediately while hot.
