6 large eggs, hard-boiled and peeled

1/4 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper, to taste

Optional: 1 tablespoon capers, drained and chopped

Optional: Lettuce leaves for serving

Instructions
 

Start by hard-boiling your eggs. Place them in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 9-12 minutes. Once cooked, transfer eggs to a bowl of ice water to cool. Peel once they’re cool.

    Once peeled, chop the eggs into bite-sized pieces and place them in a large mixing bowl.

      In a separate small bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, and a pinch of salt and black pepper. Whisk until smooth.

        Add the chopped celery, red onion, fresh dill, and optional capers to the bowl with the eggs. Combine gently to avoid mashing the eggs.

          Pour the dressing over the egg and vegetable mix, then fold everything together until well combined. Adjust seasoning with additional salt and pepper if necessary.

            Let the egg salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Serve on its own or on a bed of lettuce leaves for a refreshing touch.
