2 lbs russet potatoes, peeled and diced

1 cup heavy cream

1 cup cheddar cheese, shredded

½ cup parmesan cheese, grated

4 tablespoons unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon cayenne pepper (optional)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat the oven to 375°F (190°C). Grease a large baking dish with butter or cooking spray.

    Boil the potatoes: In a large pot, cover the diced potatoes with water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and set aside.

      Sauté the aromatics: In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another 2 minutes until fragrant.

        Mix the cream and cheeses: In a bowl, combine heavy cream, cheddar cheese, parmesan cheese, paprika, cayenne pepper (if using), and season with salt and pepper.

          Combine the drained potatoes with the sautéed onion and garlic in a large mixing bowl. Pour the cheese mixture over the potatoes and gently fold to combine until coated evenly.

            Transfer the mixture to the prepared baking dish. Dot the top with remaining 2 tablespoons of butter.

              Bake: Cover with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the top is golden and bubbly.

                Garnish with chopped fresh parsley before serving.
