8 rice paper wrappers

1 cup cooked salmon, flaked (preferably fresh or lightly smoked)

1 cup vermicelli noodles, cooked and cooled

1 cup shredded lettuce (butter or romaine)

1 cup mixed herbs (mint, cilantro, and basil)

1 medium carrot, julienned

1 cucumber, julienned

1/4 cup sliced bell peppers (red and yellow for color)

1/4 cup peanuts, crushed (for garnish)

Dipping sauce (peanut or hoisin, store-bought or homemade)

Instructions
 

Prep the Ingredients: Start by preparing all your ingredients. Cook the vermicelli noodles according to package instructions and let them cool. Flake the cooked salmon and set aside.

    Soften the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds or until it becomes pliable. Remove it from the water and lay it flat on a clean surface.

      Assemble the Rolls: On the lower third of the rice paper, place a small amount of the flaked salmon, followed by a few strands of vermicelli noodles, a handful of shredded lettuce, a mix of herbs, and a few julienned carrots, cucumber, and bell peppers.

        Wrap It Up: Fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly to enclose the filling completely. Repeat this process with the remaining rice paper wrappers and filling ingredients.

          Bake to Perfection: Preheat your oven to 400°F (200°C). Place the spring rolls on a baking sheet lined with parchment paper. Lightly brush the tops with a little olive oil. Bake for about 12-15 minutes or until the rice paper is crispy and golden brown.

            Serve with Dipping Sauce: Once baked, remove the spring rolls from the oven and let them cool slightly. Serve them warm with your choice of peanut or hoisin dipping sauce, and sprinkle with crushed peanuts for extra crunch.
