Ingredients

1 lb large shrimp, peeled and deveined

2 cups cooked jasmine rice

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 cup cucumber, thinly sliced

1 ripe avocado, sliced

¼ cup green onions, chopped

1 tablespoon sesame seeds

1 tablespoon soy sauce

2 tablespoons mayonnaise

1 tablespoon Sriracha (or to taste)

Salt and pepper to taste

Instructions

Prepare the Shrimp: In a bowl, season the shrimp with salt, pepper, and a sprinkle of garlic powder.

Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove from heat and drizzle with soy sauce.

Make the Spicy Mayo: In a small bowl, mix together the mayonnaise and Sriracha. Adjust the spice level to taste.

Assemble the Bowl: In a serving bowl, start with a base of jasmine rice. Top with cooked shrimp, cucumber slices, and avocado slices.

Add Finishing Touches: Drizzle the spicy mayo over the top, sprinkle with chopped green onions and sesame seeds for added crunch.

Serve: Enjoy your shrimp rice bowl warm, garnished with additional sesame seeds and a side of extra spicy mayo for dipping if desired.
