Ingredients
  

8 oz penne or fusilli pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon jerk seasoning (adjust to taste)

1 cup coconut milk

1/2 cup vegetable broth

Salt and pepper to taste

1/4 cup chopped fresh cilantro or parsley for garnish

Optional: 1 tablespoon lime juice or zest for brightness

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper, sauté for about 3-4 minutes until they soften. Add the minced garlic and cherry tomatoes, cooking for an additional 2 minutes until the tomatoes start to blister.

      Cook the Shrimp: Push the veggies to one side of the skillet and add the shrimp to the other side. Sprinkle the jerk seasoning over the shrimp and cook for about 2-3 minutes on each side until they are pink and cooked through.

        Create the Sauce: Pour in the coconut milk and vegetable broth, stirring well to combine with the vegetables and shrimp. Bring to a simmer and let it cook for about 2-3 minutes. Season with salt and pepper to taste and add lime juice or zest if using.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing everything together to coat the pasta in the creamy sauce. Heat through for another minute.

            Serve: Remove from heat and garnish with chopped cilantro or parsley before serving.
