1 cup fresh raspberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 pre-made pie crust or puff pastry sheet

1 egg (for egg wash)

Extra powdered sugar for dusting

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Filling: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Gently fold in the fresh raspberries, being careful not to break them apart too much. Set aside.

    Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Roll Out the Dough: If using pie crust, roll out the dough on a lightly floured surface to about 1/8 inch thick. If using puff pastry, thaw according to package instructions and roll out if needed.

        Cut the Dough: Using a cookie cutter or a sharp knife, cut the dough into small squares (about 3x3 inches) or desired shapes.

          Assemble the Bites: Place about 1 tablespoon of the raspberry cream cheese filling in the center of each dough square. Fold the corners into the center to create a pocket and pinch to seal. Ensure they are well sealed to prevent leakage.

            Egg Wash: Beat the egg in a small bowl and brush the egg wash over each filled pastry to give them a golden color when baked.

              Bake: Place the filled pastries onto the prepared baking sheet, leaving some space between them. Bake in the preheated oven for 15-18 minutes or until golden brown.

                Cool and Serve: Once baked, remove from the oven and let them cool for a few minutes. Dust with extra powdered sugar and garnish with fresh mint leaves, if desired.
