12 oz (340g) spaghetti or your favorite pasta

1 cup mixed olives (green and black), pitted and roughly chopped

3 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup sun-dried tomatoes, chopped

1/2 cup fresh parsley, chopped

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese (optional)

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and red pepper flakes; sauté for about 1 minute until the garlic is fragrant but not browned.

      Add the Olives and Tomatoes: Stir in the chopped olives and sun-dried tomatoes. Cook for 2-3 minutes, allowing the flavors to combine.

        Combine Pasta and Sauce: Add the cooked spaghetti to the skillet. Toss well to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Finish the Dish: Stir in the chopped parsley, lemon zest, and lemon juice. Season with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese for a creamy finish.
