4 large russet potatoes

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup crumbled bacon (cooked)

1/4 cup green onions, chopped

1/4 cup butter, melted

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions
 

Preheat the oven to 400°F (200°C).

    Wash and scrub the russet potatoes thoroughly, then poke several holes in each potato with a fork.

      Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.

        While the potatoes are baking, in a mixing bowl, combine the sour cream, melted butter, garlic powder, smoked paprika, salt, and pepper to create a creamy mixture.

          Once the potatoes are done, remove them from the oven and let them cool slightly before handling.

            Cut each potato lengthwise and gently scoop out some of the flesh, leaving enough to maintain structure.

              In a separate bowl, combine the potato flesh with the creamy mixture, half of the shredded cheddar cheese, and half of the crumbled bacon. Mix until well combined.

                Spoon the savory potato mixture back into the potato skins.

                  Sprinkle the remaining cheddar cheese and bacon on top of the stuffed potatoes.

                    Return the filled potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                      Remove from the oven and top with chopped green onions.
