2 cups shredded cooked chicken (rotisserie works great)

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 can (10 oz) diced tomatoes with green chilies (like Ro-Tel)

1 cup chicken broth

1 medium onion, diced

1 bell pepper (any color), diced

2 cups shredded cheddar cheese

8-10 corn tortillas, cut into quarters

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and black pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet over medium heat, add a splash of oil. Sauté the diced onions and bell pepper until they are soft and translucent, about 5-7 minutes.

      Mix the Casserole Base: In a large bowl, combine the shredded chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, chicken broth, chili powder, garlic powder, cumin, salt, and black pepper. Add in the sautéed onions and bell pepper, mixing well to combine.

        Layer the Casserole: In a greased 9x13 inch baking dish, layer half of the tortilla quarters evenly over the bottom. Pour half of the chicken mixture on top and sprinkle with a layer of cheddar cheese. Repeat with the remaining tortilla quarters and chicken mixture, finishing with a generous layer of cheddar cheese on top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese on top is bubbly and golden.
