1 lb boneless, skinless chicken breasts

1 cup plain Greek yogurt

2 tbsp chipotle sauce (adjust for spice preference)

2 tbsp ranch dressing mix

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

2 cups cooked brown rice

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 large tomato, diced

4 large flour tortillas

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine Greek yogurt, chipotle sauce, ranch dressing mix, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

    Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and shake off excess. Grill the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F. Once cooked, let it rest for 5 minutes before slicing it into strips.

      Prepare the Burrito Filling: In a large bowl, mix together the cooked rice, black beans, corn, diced tomatoes, and half of the shredded cheese. Stir to combine.

        Assemble the Burritos: On each flour tortilla, lay a generous portion of the rice and bean mixture, followed by a few slices of grilled chicken, shredded lettuce, and the remaining cheese. Optionally, add fresh cilantro for extra flavor.

          Roll the Burritos: Fold in the sides of the tortilla and then roll tightly from the bottom up to enclose the filling. Place the burrito seam-side down on a plate.
