2 slices of ciabatta or focaccia bread

4 oz fresh mozzarella cheese, sliced

1 large ripe tomato, sliced

Fresh basil leaves (about 6-8 leaves)

1 tablespoon balsamic glaze

1 tablespoon extra virgin olive oil

Salt and freshly cracked black pepper to taste

Optional: a few slices of avocado for extra creaminess

Instructions
 

Preheat a panini press or a skillet over medium heat. If using a skillet, you will need a heavy pan to press down on the sandwich.

    Drizzle the interior sides of the ciabatta or focaccia slices with olive oil.

      On one slice of bread, layer the fresh mozzarella, followed by the sliced tomatoes and fresh basil leaves. If you're using avocado, add it on top of the basil.

        Drizzle the balsamic glaze over the top layer and sprinkle with salt and freshly cracked black pepper.

          Place the second slice of bread on top and gently press down.

            If using a panini press, cook for about 3-5 minutes or until the bread is golden and the cheese has melted. If using a skillet, place the sandwich in the pan and press down with the heavy pan for about 3-5 minutes on each side or until golden brown and crispy.

              Remove the panini from the heat and let it rest for about a minute before slicing, allowing the cheese to settle.
