Ingredients
  

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 cup unsalted butter, softened

1 cup shredded mozzarella cheese

1 large egg

1 cup buttermilk

1 cup marinara sauce, divided

1 cup diced pepperoni (or your choice of toppings)

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a standard muffin tin.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, oregano, and garlic powder until well combined.

      Cream Butter and Cheese: In another bowl, beat the softened butter and mozzarella cheese until creamy. Add the egg and buttermilk, mixing until fully incorporated.

        Combine Wet and Dry Ingredients: Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

          Fill Muffin Tin: Spoon a tablespoon of batter into each muffin cup to create a base. Add a tablespoon of marinara sauce on top of the batter in each cup, followed by a sprinkle of diced pepperoni.

            Add More Batter: Top each cup with more batter, filling each muffin cup about 3/4 full.

              Add More Marinara and Cheese: Spoon a bit more marinara sauce on top of each cupcake and sprinkle with grated Parmesan cheese.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Allow the pizza cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack. Top with fresh basil leaves if desired, and serve warm!
