2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

¾ cup milk

½ cup olive oil

2 large eggs

1 cup shredded mozzarella cheese

1 cup Italian sausage (cooked and crumbled)

1 cup marinara sauce

½ cup diced bell peppers (optional)

Fresh basil leaves for garnish

Extra marinara for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or olive oil.

    Prepare the Dough: In a mixing bowl, combine the flour, baking powder, salt, garlic powder, oregano, and red pepper flakes. Mix well.

      Mix Wet Ingredients: In another bowl, whisk together the milk, olive oil, and eggs until well combined.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Add Fillings: Gently fold in the shredded mozzarella, cooked Italian sausage, and diced bell peppers, if using.

            Fill Muffin Tin: Use a spoon to fill each muffin cup about halfway with the batter. Then add a spoonful of marinara sauce on top of each and finish with a little more batter to cover the sauce entirely.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Allow the cupcakes to cool in the tin for about 5 minutes before carefully transferring them to a wire rack. Garnish with fresh basil before serving.
