4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Salt and pepper to taste

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

½ cup heavy cream

⅓ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil leaves for garnish (optional)

Lemon wedges for serving

Instructions
 

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Add Tomatoes and Spinach: Toss in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Then, add the fresh spinach and cook until wilted.

          Create the Creamy Base: Pour in the heavy cream, stir to combine, and let it simmer for 2-3 minutes. Then, add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is fully melted and the sauce is creamy.

            Combine with Salmon: Gently return the salmon fillets to the skillet, spooning the creamy sauce over them. Let it simmer for an additional 2 minutes to heat the salmon through.

              Serve: Plate the salmon with a generous drizzle of the creamy garlic butter sauce. Garnish with fresh basil leaves and serve with lemon wedges on the side.
