1 cup quinoa, rinsed

2 cups vegetable broth

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Optional toppings: diced tomatoes, pickled jalapeños, or feta cheese

Instructions
 

In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    While the quinoa is cooking, prepare the dressing by whisking together lime juice, olive oil, ground cumin, salt, and pepper in a small bowl. Set aside.

      In a large mixing bowl, combine the cooked quinoa, black beans, corn, and diced red bell pepper. Pour the dressing over the mixture and toss gently to coat all ingredients evenly.

        Taste and adjust seasoning if necessary, adding more lime juice, salt, or pepper as desired.

          To serve, divide the quinoa mixture into bowls, garnish each with sliced avocado, chopped cilantro, and any optional toppings you desire.
