2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (green or red), diced

1 carrot, diced

2 stalks celery, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

4 cups vegetable broth

1 cup diced tomatoes (canned or fresh)

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

¼ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Stir in the minced garlic, diced bell pepper, carrot, and celery. Sauté for another 5 minutes until the vegetables are softened.

      Add the ground cumin, smoked paprika, and dried thyme to the pot, stirring well to toast the spices for about 1 minute.

        Pour in the vegetable broth and add the diced tomatoes, bay leaf, and rinsed white beans. Stir to combine.

          Bring the soup to a gentle boil, then reduce the heat to low. Simmer uncovered for 20-25 minutes to blend the flavors, stirring occasionally.

            During the last 5 minutes of cooking, add the chopped spinach or kale and continue to simmer until wilted.

              Remove the bay leaf from the pot and season the soup with salt and pepper to taste.

                Serve hot, garnished with fresh cilantro and a wedge of lime on the side for an extra zing.
