3 lbs pork shoulder, trimmed

1 cup fresh orange juice

1/2 cup lime juice

1/4 cup olive oil

6 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon dried oregano

1 teaspoon smoked paprika

1 jalapeño, deseeded and finely chopped

Salt and black pepper to taste

Fresh cilantro for garnish

Instructions
 

In a large mixing bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, cumin, oregano, smoked paprika, jalapeño, salt, and black pepper to create the marinade.

    Place the trimmed pork shoulder in a large resealable plastic bag or a non-metallic dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld.

      Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade for later.

        Cover the roasting pan tightly with aluminum foil and roast the pork in the preheated oven for about 3 hours, or until it is tender and easily shredded with a fork.

          After 3 hours, remove the foil and pour the reserved marinade over the pork. Increase the oven temperature to 400°F (200°C) and roast uncovered for an additional 30 minutes, allowing the pork to develop a lovely caramelized exterior.

            Once finished, remove the pork from the oven and let it rest for 15 minutes before shredding it with two forks.

              Serve the shredded pork on a platter, garnished with fresh cilantro and drizzled with any remaining juices from the roasting pan.
