1 lb boneless, skinless chicken thighs

6 cups chicken broth

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 medium tomatoes, diced

1 cup corn (frozen or fresh)

1 teaspoon cumin

1 teaspoon oregano

½ teaspoon smoked paprika

1 bay leaf

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro for garnish

Sliced avocado (optional for serving)

1 cup cooked white rice (optional, for serving)

Instructions
 

In a large pot, heat a tablespoon of oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the chopped red and green bell peppers, and sauté for an additional 5 minutes.

        Push the vegetables to one side of the pot, then add the chicken thighs in the center. Cook for about 4-5 minutes on each side until lightly browned.

          Stir in the diced tomatoes, corn, cumin, oregano, smoked paprika, and bay leaf. Mix everything together.

            Pour in the chicken broth, ensuring the chicken is submerged. Bring the mixture to a gentle boil.

              Reduce the heat to a simmer and cover the pot. Cook for approximately 25-30 minutes until the chicken is cooked through and tender.

                Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot.

                  Squeeze in the lime juice and season the soup with salt and pepper to taste. Adjust seasoning as needed.

                    Simmer for an additional 5 minutes, allowing the flavors to meld together before serving.
