3-4 lbs pork shoulder (or pork butt)

1 cup chicken broth

1/2 cup yellow onion, finely chopped

4 cloves garlic, minced

1/4 cup apple cider vinegar

1/2 cup brown sugar

1/4 cup soy sauce (or tamari for a gluten-free option)

1/4 cup sweet chili sauce

1 tablespoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon black pepper

1 teaspoon salt

Optional for serving: hamburger buns, coleslaw, pickles

Instructions
 

Prep the Pork: Trim excess fat from the pork shoulder and cut it into large chunks to fit into your crockpot if necessary.

    Make the Marinade: In a small bowl, whisk together chicken broth, apple cider vinegar, brown sugar, soy sauce, sweet chili sauce, smoked paprika, cumin, black pepper, and salt until well combined.

      Combine Ingredients in the Crockpot: Place the chopped onion and minced garlic at the bottom of the crockpot. Add the pork chunks on top. Pour the marinade over the pork, ensuring it's evenly coated.

        Cook: Cover and cook on low heat for 8-10 hours or on high for 4-6 hours, until the pork is tender and shreds easily with a fork.

          Shred the Pork: Once cooked, carefully remove the pork from the crockpot and place it on a large cutting board. Use two forks to shred the meat into bite-sized pieces.

            Thicken the Sauce (Optional): If a thicker sauce is desired, you can transfer the remaining juices to a saucepan and simmer over medium heat for about 10-15 minutes until reduced.

              Combine & Serve: Return the shredded pork to the crockpot, mixing it with the juices. Serve on hamburger buns topped with coleslaw and pickles, if desired.
