Ingredients

3-4 lbs pork shoulder (or pork butt)

12 oz can Coca-Cola (regular or diet)

1 cup barbecue sauce (your choice)

1 medium onion, sliced

4 cloves garlic, minced

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1 teaspoon paprika (smoked or sweet)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

8 burger buns (for serving)

Pickles and coleslaw (for garnish)

Instructions

Prepare the Pork: Start by trimming any excess fat from the pork shoulder. Cut it into large chunks if desired to ensure even cooking.

Sauté Onions and Garlic: In a skillet over medium heat, sauté the sliced onions and minced garlic until the onions are translucent and fragrant, about 3-4 minutes.

Mix the Sauce: In a large bowl, combine the Coca-Cola, barbecue sauce, brown sugar, Worcestershire sauce, apple cider vinegar, paprika, salt, black pepper, and red pepper flakes (if using). Whisk together until well combined.

Layer in the Crockpot: Place the sautéed onions and garlic at the bottom of the crockpot. Add the pork chunks on top.

Pour the Sauce: Pour the Coca-Cola mixture evenly over the pork in the crockpot. Ensure the pork is well-coated with the sauce.

Cook: Cover the crockpot and cook on low for 8-10 hours or on high for 4-5 hours until the pork is tender and easily pulls apart with fork.

Shred the Pork: Once cooked, remove the pork from the crockpot and place it on a large cutting board. Use two forks to shred the meat into bite-sized pieces.

Combine with Sauce: Return the shredded pork to the crockpot and stir well to combine with the remaining sauce. Let it simmer for an additional 15-30 minutes on low for the flavors to meld.

Serve: Spoon generous amounts of pulled pork onto burger buns and top with pickles and coleslaw if desired. Serve hot and enjoy!
