2 pounds boneless, skinless chicken thighs

1/2 cup soy sauce

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 tablespoon minced garlic

1 tablespoon minced ginger

1/4 teaspoon red pepper flakes (adjust for spice level)

1/4 cup ketchup

2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

1 green onion, thinly sliced (for garnish)

In a large bowl, whisk together the soy sauce, brown sugar, apple cider vinegar, minced garlic, minced ginger, red pepper flakes, and ketchup until well combined.

    Place the chicken thighs in the crock pot, ensuring they are spread out evenly.
