2 pounds beef sirloin or chuck roast, cut into bite-sized cubes

1 cup beef broth

1 cup red wine (optional; substitute with additional broth if desired)

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (for cornstarch slurry)

Chopped fresh parsley for garnish

Prepare the Beef: In a large bowl, toss the beef cubes with salt, black pepper, and a little bit of flour (optional) to coat.

    Sear the Meat (Optional): In a skillet over medium-high heat, add a drizzle of oil and sear the beef cubes until browned on all sides. This step adds extra flavor but can be skipped for a quicker prep.

      Combine Ingredients: In the crock pot, add the seared beef cubes, beef broth, red wine, chopped onion, minced garlic, soy sauce, Worcestershire sauce, and dried thyme. Stir to combine.

        Cook: Cover the crock pot and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and easily falls apart.

          Thicken the Gravy (Optional): If you like a thicker gravy, mix the cornstarch with water in a small bowl to create a slurry. About 30 minutes before the cooking time is up, stir the slurry into the crock pot and let it thicken.
