2 cups green cabbage, finely shredded

1 medium carrot, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 cup all-purpose flour

1/2 cup cornmeal

1 large egg

1/4 cup fresh parsley, chopped

Vegetable oil for frying

Garlic Sauce:

1/2 cup Greek yogurt

1 tablespoon mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

In a large bowl, combine the shredded cabbage, grated carrot, and chopped onion. Sprinkle salt over the vegetables and let them sit for about 10 minutes to draw out moisture.

    After 10 minutes, squeeze out any excess water from the vegetables using a clean kitchen towel or by hand.

      In the same bowl, add minced garlic, black pepper, paprika, cayenne pepper, flour, cornmeal, and the egg. Mix until well combined. The mixture should be thick but hold together.

        Heat vegetable oil in a large skillet over medium heat (about 1/4 inch deep). Test the oil temperature by dropping in a small spoonful of the mixture; it should sizzle immediately.

          Using a spoon or your hands, form small fritters (about 2-3 inches in diameter) and gently place them in the hot oil. Avoid overcrowding the pan.

            Fry the fritters for about 4-5 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.

              While the fritters are cooking, prepare the garlic sauce by mixing Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Adjust seasoning to taste.

                Once all fritters are cooked, serve them warm with a generous dollop of garlic sauce on the side.
