Ingredients

1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

1/2 cup cornstarch

1 cup ice-cold sparkling water (or club soda)

1 egg, beaten

1 tsp baking powder

A pinch of salt

Vegetable oil, for frying

1/2 cup tempura dipping sauce (store-bought or homemade)

Optional: Thinly sliced green onions and grated daikon for serving

Instructions

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove any excess moisture. This helps them crisp up during frying. Lightly season with salt and set aside.

Make the Tempura Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and a pinch of salt. Add the beaten egg and slowly pour in the ice-cold sparkling water, whisking gently until just combined. Do not overmix; it’s okay if there are small lumps.

Heat the Oil: In a deep skillet or pot, pour in vegetable oil to a depth of about 2-3 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; if it sizzles and rises to the surface, it’s ready.

Fry the Shrimp: Dip each shrimp into the tempura batter, ensuring it's fully coated, then carefully lower them into the hot oil. Fry in batches to avoid overcrowding. Cook for about 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to remove and drain the shrimp on paper towels.

Serving: Serve the crispy shrimp tempura hot with tempura dipping sauce on the side. Garnish with thinly sliced green onions and grated daikon if desired.

Enjoy: Dive into your crispy shrimp tempura as an appetizer or serve it alongside a fresh salad for a delightful meal!
