1 large head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for heat)

¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh parsley, chopped (for garnish)

Fresh lemon juice (for serving)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the cauliflower by washing and cutting the head into even-sized florets. Make sure they are not too small, as this will help in achieving the crispy texture.

      Create the seasoning mix by combining the olive oil, garlic powder, smoked paprika, cumin, salt, black pepper, and cayenne pepper in a large mixing bowl.

        Toss the cauliflower florets in the seasoning mix until each piece is well-coated. This step is crucial for ensuring maximum flavor.

          Spread the cauliflower evenly across the prepared baking sheet, ensuring that the florets have enough space between them. Crowding the pan will make them steam rather than roast.

            Roast in the preheated oven for 25-30 minutes, flipping the florets halfway through. The cauliflower should be golden brown and crispy around the edges.

              Sprinkle the grated Parmesan cheese over the roasted cauliflower during the last 5 minutes of cooking. Allow it to melt and get slightly crispy.

                Remove from the oven and garnish with chopped fresh parsley. Drizzle with fresh lemon juice just before serving to brighten the flavors.
