2 large yellow onions, sliced into 1/4 inch rings

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional for heat)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cold sparkling water

Oil for frying (canola or vegetable oil)

Optional: Fresh parsley, chopped, for garnish

Prepare the Onions: Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside in a bowl.

    Make the Batter: In a mixing bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Gradually mix in the cold sparkling water until smooth. The batter should be thick but dip-able.
