4 small to medium-sized baby potatoes

1 tablespoon olive oil

1 teaspoon paprika

½ teaspoon garlic powder

¼ teaspoon onion powder

Salt and pepper to taste

½ cup shredded cheddar cheese

¼ cup cooked bacon bits (or sautéed mushrooms for a vegetarian option)

2 tablespoons sour cream (or Greek yogurt)

2 tablespoons chopped green onions

Optional: a sprinkle of chili flakes for extra heat

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Scrub the baby potatoes thoroughly and pat them dry.

      Using a sharp knife, carefully make thin, deep cuts across each potato, stopping just before you reach the bottom to keep them intact. Aim for about 1/8-inch slices, but do not cut all the way through.

        Place the potatoes on the prepared baking sheet. Drizzle olive oil over them, making sure it's evenly distributed.

          In a small bowl, mix together paprika, garlic powder, onion powder, salt, and pepper. Sprinkle this spice mixture generously over each potato, getting some between the slices if possible.

            Bake the potatoes in the preheated oven for 25-30 minutes, until they begin to crisp and are tender when pierced with a fork.

              Remove the potatoes from the oven and sprinkle shredded cheddar cheese and bacon bits (or mushrooms) on top. Return them to the oven for another 5-10 minutes, until the cheese is bubbly and melted.

                Once out of the oven, drizzle sour cream on each potato and sprinkle with chopped green onions.

                  For an extra kick, add a sprinkle of chili flakes on top if desired.

                    Serve warm as a delightful appetizer or side dish!
