Ingredients

2 large russet potatoes, peeled

1 small onion, finely grated

1/4 cup all-purpose flour

1 large egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup vegetable oil (for frying)

Fresh chives, chopped (for garnish)

Instructions

Prep the Potatoes: Grate the peeled russet potatoes using a coarse grater. Place the grated potatoes into a clean kitchen towel and squeeze out as much excess moisture as possible. This step is crucial for crispiness.

Combine Ingredients: In a large mixing bowl, add the squeezed potatoes and the finely grated onion. Mix in the flour, beaten egg, garlic powder, onion powder, salt, and pepper until all ingredients are well combined.

Form Patties: Using your hands, shape the mixture into patties about 1/2-inch thick. Ensure they hold together well; if too loose, add a bit more flour.

Heat the Oil: In a large skillet, heat the vegetable oil over medium heat until shimmering. You can test the oil by dropping a small piece of potato mixture into it; it should sizzle immediately.

Fry the Patties: Carefully place the patties into the hot oil, making sure not to overcrowd the skillet. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy. Remove the patties and place them on a paper towel-lined plate to absorb excess oil.

Serve and Garnish: Serve the hash brown patties hot, garnished with freshly chopped chives.
