2 sheets of puff pastry (thawed)

8 slices of deli ham

8 slices of cheese (Swiss or Gruyere work well)

1 egg (beaten, for egg wash)

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh herbs (like thyme or parsley) for garnish (optional)

Flour for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thickness. Cut each sheet into rectangles (approximately 3x4 inches). You should get about 12 pieces total (6 from each sheet).

      Assemble the Stacks: Lay 6 pastry rectangles on the lined baking sheet. Spread a thin layer of Dijon mustard on each piece. Place a slice of ham and a slice of cheese on top of each mustard-coated pastry rectangle. Season with a pinch of salt and pepper.

        Create the Layers: Top each ham and cheese layer with another pastry rectangle, pressing down gently to seal. Brush the tops with the beaten egg for a golden finish.

          Vent the Pastries: Using a sharp knife, make a few small slits on the top pastry layer to allow steam to escape during baking.

            Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes or until the pastries are puffed and golden brown.

              Garnish and Serve: Once done, remove from the oven and let cool slightly. Optionally, garnish with fresh herbs. Serve warm and enjoy your crispy ham & cheese puff pastry stacks!
