Prepare the Potatoes: Place the diced potatoes in a large bowl and cover them with cold water. Let them soak for about 20 minutes to remove excess starch, then drain and pat dry with paper towels. This step will help achieve maximum crispiness.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced Polish sausage and cook for about 5-7 minutes, until browned and slightly crispy. Remove the sausage from the skillet and set aside.
