Crispy Chinese Honey Garlic Chicken

1 lb boneless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1 large egg, beaten

1/2 cup vegetable oil (for frying)

3 cloves garlic, minced

1/4 cup honey

2 tbsp soy sauce (low sodium)

1 tbsp rice vinegar

1 tsp sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and pepper. Mix until well combined.

    Dip each piece of chicken into the beaten egg and then coat it in the flour mixture, ensuring each piece is evenly coated.

      Heat the vegetable oil in a large pan over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry for 5-7 minutes, or until golden brown and crispy, turning occasionally for even cooking.

        Remove the crispy chicken and set it on a paper towel-lined plate to drain excess oil.

          In a separate small saucepan over medium heat, add the minced garlic and sauté until fragrant (about 30 seconds).

            Add the honey, soy sauce, rice vinegar, and sesame oil to the saucepan. Stir well and let it simmer for about 3-4 minutes until the sauce thickens slightly.

              In a large bowl, toss the crispy chicken with the honey garlic sauce until well coated.

                Serve immediately, garnishing with chopped green onions and sesame seeds for added crunch and flavor.
