Ingredients

2 boneless, skinless chicken breasts

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 cups penne pasta

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup baby spinach

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, and paprika. Let them marinate for about 15 minutes to absorb the flavors.

Coat the Chicken: Set up a breading station: place the flour in one shallow dish, the beaten eggs in the middle, and the panko breadcrumbs in a third dish. Dip each chicken breast first in flour, shaking off the excess, then in the eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the breaded chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and let rest on a paper towel-lined plate.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

Make the Creamy Sauce: In the same skillet where you cooked the chicken (add a bit more olive oil if needed), pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, mixing until smooth. Add the spinach and let it wilt for about 2 minutes. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.

Combine Everything: Add the cooked penne pasta to the skillet and toss it in the creamy sauce until well coated. Adjust seasoning with salt and pepper if needed.

Serve: Slice the crispy chicken breasts and place them on top of the creamy pasta. Garnish with chopped fresh parsley for a vibrant color and additional flavor.

Prep Time, Total Time, Servings: 15 min | 40 min | 2 servings

                  - Presentation Tips: Serve the pasta on a large plate or bowl, layering the sliced chicken on top. Drizzle any remaining sauce over the chicken and finish with a sprinkling of Parmesan cheese and parsley.
