1 lb (450g) chicken breast, boneless and skinless, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

Oil for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

Chopped green onions and sesame seeds for garnish

Instructions
 

In a mixing bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk together until smooth.

    Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes to tenderize and marinate the chicken.

      In another bowl, mix the flour, cornstarch, and baking powder. This will be the coating for the chicken.

        Heat oil in a deep skillet or frying pan over medium-high heat (about 350°F/175°C).

          Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture, ensuring an even coat.

            Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid crowding. Cook for about 5-7 minutes per batch or until golden brown and crispy. Remove with a slotted spoon and set on paper towels to drain excess oil.

              In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust the sriracha according to your preference for heat.

                To serve, toss the crispy chicken pieces in the Bang Bang sauce or drizzle it generously over the chicken.

                  Garnish with chopped green onions and sesame seeds. Serve hot and enjoy the crunch and flavor!
